If you don't have a slow cooker, you simply need to get one. A recipe like this is so easy to throw together when you leave for work in the morning and it will be ready for you when you get home.
SLOW COOKER CHICKEN TORTILLA SOUP
1.5 lbs chicken breasts
1 cup chicken broth (I like the low sodium kind)
1 jar of clean salsa (get something fresh and make sure no funky ingredients or sugar)
1 pound frozen corn, thawed (exchange with green beans if you are going RX on the challenge)
1 pound frozen bell peppers (Trader Joe's)
3 corn tortillas shredded by hand (eliminate if going RX)
Cilantro
Put the chicken in the bottom of the crock pot. Pour all of the ingredients except Cilantro over the chicken. Cook 8-10 hours on low. When it's done, stir everything up and shred the chicken. Add Cilantro if desired. Serve.
If you aren't doing the challenge, serve with yogurt or sour cream on top or cheese... go to town.

Whole Life Challenge
So I signed up to do this Whole Life Challenge starting in 4 days and I'm compiling multiple recipes that are easy to make and follow all of the rules for the challenge. These are for my fellow RCF'ers. Love you all.
SWEET POTATO CHIPS
4 sweet potatoes (remove skin)
1 T olive oil
salt
pepper
2 cloves garlic minced
parsley
Cut potatoes in 1/4 inch slices. If you have a mandolin or other slicer it is much easier. Combine everything but the parsley in a bowl or ziploc bag to mix it all together. Spray a cooking sheet or use a silpat and arrange potatoes in a single layer on the cooking sheet.
Bake at 400 for 30 minutes. Turn after 15 minutes.
Add chopped parsley after you take them out of the oven.

Bacon Rules My Life
Everyone who knows me knows how much I love bacon. It is pretty much the most amazing food every invented. There are many kinds of bacon but Canadian ain't one of them. That's ham, people! You will find many recipes here with bacon. I only use the uncured kind because given the amount of bacon I ingest, I'd probably be dead by now if I ate all those chemicals.

BACON WRAPPED CHICKEN
1 package skinless chicken thighs
Smoky seasoning (I use Applewood smoked seasoning from Pampered Chef)
salt and pepper to taste
1 package uncured bacon
Sprinkle thighs with seasoning and salt and pepper (don't need a lot of salt because of the bacon). Wrap the thighs with one piece of bacon each and tuck the ends under. Place them in a glass baking dish. Cook at 350 for 35-40 minutes. The end. Eat up.Ba
